Asian Spring Roll Dipping Sauce
This sauce makes and ideal accompianiment to the chicken spring rolls. It can be kept in a sealed container in the fridge for 2-3 weeks and to add extra flavour, can also be used to coat meat prior to grilling.

Ingredients
Hot water 9 fl oz/255ml
Sugar 4 oz/110g
Red chili 1/2/5g
Coriander leaves 2-3/5g
Garlic 1 clove
Root ginger 1/2 oz/15g
Fresh lime juice 1/2 tbsp/10mls
Instructions

Dissolve the sugar in the water.

Finely chop the chili, coriander, garlic and ginger, then add to the sugar and water.

Bring this mixture to the boil, then simmer for 5 minutes to let the flavours infuse.

Once the sauce has infused for five minutes, take it off the heat and add the lime juice to taste.

Serve as an accompaniment to Chicken Spring Rolls.
