Red Onion, Basil and Potato Salad
This is a good accompaniment to barbequed food and the added basil makes a nice change from the traditional potato salad.

Ingredients
Baby Potatoes 1 1/2lb/680g
Red Onion 4oz/110g
Basil 12 leaves
Pepper large pinch/4g
Mayonnaise 4oz/110g
Instructions

Place your potatoes into a pan filled with cold water and bring to the boil.

Boil potatoes for approximately 15 minutes, checked they are cooked by prodding them with the end of a sharp knife. The knife should easily penetrate the flesh when they are cooked. Cool in cold water and strain.

Cut potatoes in half.

Finely chop the onions and basil.

Add all the ingredients to the potatoes and mix together well and serve.
