Ingredients

| Rice or white wine vinegar |
5fl oz/150ml |
| Brown sugar |
2 tbsp/40g firmly packed |
| Cucumbers |
8oz/225g, cut into 1/4 inch slices. |
| Shallots |
4 thinly sliced |
| Chili papper flakes |
1/4 tsp |
| Cilantro or Parsley |
1 tbsp, chopped. |
| A jar with a tight fitting lid. |

Instructions
|
Combine vinegar, sugar, salt and Pepper to taste, in a jar with a tight fitting lid.
Shake vigourously until the sugar has dissolved. Combine with the remaining ingredients in a bowl.
Toss and marinate for at least 30 minutes before serving.
