Thai Cucumber Salad
A great accompaniment to Thai Fish Cakes.

Ingredients
Rice or white wine vinegar 5fl oz/150ml
Brown sugar 2 tbsp/40g firmly packed
Cucumbers 8oz/225g, cut into 1/4 inch slices.
Shallots 4 thinly sliced
Chili papper flakes 1/4 tsp
Cilantro or Parsley 1 tbsp, chopped.
A jar with a tight fitting lid.
Instructions

Combine vinegar, sugar, salt and Pepper to taste, in a jar with a tight fitting lid.

Shake vigourously until the sugar has dissolved. Combine with the remaining ingredients in a bowl.

Toss and marinate for at least 30 minutes before serving.
